I grew up eating casseroles and I’m still a big casserole fan, so I guess it’s not surprising that when I counted them up there are more than 40 Low-Carb and Keto Casseroles on my site! But when I was growing up the word casserole meant a dish that had meat with rice or pasta and some kind of canned soup.
It was kind of life-changing when I realized I could make delicious carb-conscious casseroles that still had plenty of comfort-food appeal without using those high-carb ingredients. And some of these tasty casserole recipes have turned out to be these most popular recipes on my site!
All the recipes featured here are casseroles for dinner that are low in carbs, but quite a few are definitely Keto casseroles; you can click to an individual recipe and look at the diet-type icons or scroll down to the nutritional information to see if a casserole is low enough in carbs for you. While some people might consider casseroles an old fashioned dish, personally I love low-carb casseroles for the way they almost guarantee leftovers! I have been enjoying your recipes for some time. Thank you for sharing. Do you mind me asking how you got started and how you learned this plan? I am trying to lose weight and I’m reading books on low carb and keto, but some of it doesn’t make sense to me. Thanks.
Hi Karen,
Glad you have enjoyed the recipes. I assume when you say “how you got started” you are talking about when I started losing weight? In 2004 I started on the original South Beach Diet, which doesn’t really even exist any more (although you can still buy the books). I lost 42 pounds on South Beach and then through the years (and after the South Beach Diet was sold to a company that started selling packaged food) I gradually transitioned to what I call a “carb-conscious” diet. This isn’t a formal plan, I just watch my carbs and when I’m trying to lose weight I try to eat less than 50 carbs per day.
But my site still has plenty of higher-carb recipes from my South Beach days, some of which I am currently making lower-carb versions of. And there are also lots of recipes for people following low-carb or Keto diets. I don’t advocate one type of diet on my site, and believe strongly that everyone gets to make their own food choices.
I have my comments set so I can’t leave links (to stop spammers) but if you search things like “South Beach Diet” and “Diet Types” on my site, you can find some posts you might find interesting. There are also some links on the “About” page that might be helpful.
Good luck on your weight loss journey. Changing your eating habits is never easy, but I hope my recipes will be helpful.
I made your Low-Carb Twice Baked Cauliflower casserole this evening and it was fantastic. I really wasn’t satisfied with 1/8 of the casserole and ate more.

I’m afraid I can’t reformat the recipes. It is done automatically by the recipe card technology that gives the recipe data to Google, calculates the nutritional information, and provides a system that allows for recipe ratings. There is nothing I can do to change how information is displayed.

Good for you. Of course none of these will feed that many without at least tripling the recipe.
Low-Carb Deconstructed Pizza Casserole is easy to make, and that’s the most popular casserole on the blog but you’d probably have to 4x it unless you’re serving with other things.
Cheesy Low-Carb Taco Casserole is popular and makes 8 servings.
I also love Deconstructed Stuffed Cabbage Casserole which makes 8 servings and that one also has a version that’s not low-carb if you wanted to offer two options.
And the newer recipe for Cauliflower Rice Sausage Casserole is delicious and easy to make although it only makes 6 servings.

Hi Kalyn, I'm so excited to have found your low-carb recipes … specifically this enchilada one. My husband and I (we're newly weds!) recently began our low-carb journey and it's going well after 6 weeks. We began shooting for under 100g a day, and now we're cruising at 35g a day with great success. I've looked over the enchilada recipe for nutrition info/carbs per serving and I must be too distracted by the pictures, my tummy growling and mouth watering to find it! Help!

I don't calculate carb counts because it's too hard to know what products people might use or how much they will eat, but in every recipe, directly after the actual recipe there's a section that says NUTRITIONAL INFORMATION. That will tell you two easy ways you can get the carb count if you need it. Glad you're enjoying the recipes.
