For years I bought fresh mozzarella pearls at Costco and used them in this Asparagus Frittata recipe. But when I couldn’t find those mozzarella pearls any more I decided this Asparagus Frittata with Fresh Mozzarella should get an update with an ingredient that was still available! So we used chopped fresh mozzarella pieces this time and it was still so, so tasty.

It’s asparagus season, and this would be a lovely idea for brunch for a special occasion. And don’t be intimidated by the word frittata, because this Asparagus and Fresh Mozzarella Frittata is really easy to make for an impressive breakfast!

I do want to mention that we had high hopes of the spears of asparagus showing through the egg in the finished frittata, but sadly the eggs puffed up and almost completely covered the asparagus. No problem though, it was quickly devoured and no one seemed to care about that at all!

What is Fresh Mozzarella?

There are quite a few varieties of Mozzarella cheese, and the creamy fresh Mozzarella used in this recipe is different from the grated Mozzarella that most people are familiar with. Fresh Mozzarella is soft, creamy, and mild in flavor, and it’s sold packed in water or sealed in plastic and should be eaten within a few days. Can you make this with regular grated Mozzarella? Of course! But the creamy fresh mozzarella really was so delicious in the Asparagus Frittata!

What is a Frittata?

A frittata is an Italian style omelet which cooks on top of the stove without being turned and then gets browned under the broiler for a few minutes at the end. You can read more about the difference between an omelet and a frittata if you’re interested. And this type of dish is perfect for breakfast, lunch, or dinner.

Can you make the Asparagus Frittata with frozen asparagus?

I know someone is going to ask about using frozen asparagus for this frittata recipe, so let me say first that I’ve never cooked frozen asparagus and personally I would always use fresh asparagus. But if that’s not available for you or you like the ease of frozen vegetables, I would be sure the asparagus is completely thawed and pat it dry if you’re making this frittata recipe with frozen asparagus, and the cooking time for the asparagus will probably be shorter.

Steps for making this Asparagus Frittata:

  1. Wash and dry asparagus tips, and cut to fit your pan in a single layer.
  2. Heat olive oil in heavy frying pan, then add the asparagus and cook at high heat about 2-3 minutes.
  3. When asparagus is barely starting to brown on one side, turn and cook on the other side.
  4. While asparagus cooks, cut fresh Mozzarella into cubes.
  5. Remove asparagus to a dish.
  6. Beat eggs with Spike Seasoning (affiliate link) or other seasoning mix until eggs are well-beaten.
  7. Add a little more oil to the pan and heat on low. Pour eggs into pan, let cook for a couple minutes.
  8. Then lay the asparagus spears in a single layer in the egg mixture. Sprinkle the mozzarella pieces around the asparagus.
  9. Then sprinkle parmesan cheese on top. (If you’re planning to brown the top of the frittata under the broiler turn the broiler on now.)
  10. Cover pan and cook on low heat about 10-12 minutes.
  11. When edges are set but the center is still not completely set, put pan under the broiler and brown the top for 3-4 minutes. (I have to turn the pan at least once to get it browned evenly in my broiler.)
  12. If you’re not browning under the broiler, just cook covered until the whole frittata is firm, about 14 minutes.
  13. Sprinkle Asparagus and Fresh Mozzarella Frittata with chives or chopped green onions and serve hot.

This Asparagus Frittata with Fresh Mozzarella makes an impressive low-carb breakfast for guests and it's also easy to make.

Ingredients

  • 8 oz. asparagus tips or cut asparagus pieces
  • 4 tsp. olive oil, divided
  • salt and fresh ground black pepper to taste
  • 6 eggs, well beaten
  • 1 tsp. Spike Seasoning (see notes)
  • 4 oz. fresh Mozzarella, cut into small cubes
  • 2 T freshly-grated Parmesan cheese
  • 2 T thinly sliced green onions for garnish, optional (see notes)

Instructions

  1. Wash and dry asparagus tips, and cut into sizes which will fit into your pan in a single layer.
  2. Heat 2 tsp. olive oil in heavy frying pan, then add the asparagus, season with salt and fresh ground black pepper, and cook at high heat about 2-3 minutes.
  3. When asparagus is barely starting to brown on one side, turn and cook about 2 minutes on the other side.
  4. While asparagus browns, cut the fresh Mozzarella into small cubes. Remove asparagus to a dish.
  5. While oil heats, beat eggs with Spike seasoning until eggs are well-beaten.
  6. Add 2 tsp. more oil to the pan and heat on low. Pour eggs into pan, let cook for a couple minutes.
  7. Then lay the asparagus spears in a single layer in the egg mixture.
  8. Use your fingers to sprinkle the mozzarella pieces around the pieces of asparagus, then sprinkle parmesan cheese on top.
  9. If you’re planning to brown the top of the frittata under the broiler, turn the broiler on now.
  10. Cover pan and cook on low heat about 10-12 minutes, or until the edges are set but the center is still not completely set.
  11. Then put pan under the broiler and brown the top for 3-4 minutes. (I have to turn the pan at least once to get it browned evenly in my broiler. WATCH IT CAREFULLY!)
  12. If you’re not browning under the broiler, just cook covered until the whole frittata is firm, about 14 minutes.
  13. Sprinkle Asparagus and Fresh Mozzarella Frittata with chopped green onions (or chives) and serve hot.

Notes

If you don't have Spike Seasoning (affiliate link), just use another all-purpose seasoning blend that's good with eggs. If you're lucky enough to have fresh chives, they would be lovely as a garnish for this dish.
