Danica's Kitchen turns 15 with Three Questions for Readers!
Fifteen years ago I sat down at the computer and typed out a few recipes that people had been asking for, and the rest is history! Thanks to my readers for all the support through the years!
Mostly, I am just s0 grateful!
It’s hard to believe it really has been fifteen years since I first sat down at the computer and typed out a few recipes into a simple blog! There are so many reasons I’m grateful that happened and I want to start this birthday post with a THANK YOU to the faithful readers who’ve followed my blogging journey through the years. And huge thanks also to the web designers, techie experts, advertising specialists, fellow bloggers, and family members who have supported my work in a wide variety of ways (there are far too many of you to name, but you know who you are!)
This year’s blog birthday comes in the middle of a world-wide pandemic, and my heart is aching at the troubles so many people are having to endure. If you’re reading this, I hope you are safe at home and aren’t experiencing too much loss or economic pain. I’ve never been quite so grateful for having a job where I already work at home, and I’m doing my best to stay safe. And I’m trying to share recipes that are still accessible and relevant during this interesting time when everyone has to cook more but has less access to ingredients!
But I’m struggling with the changes in technology!
Last blog anniversary I talked about examining my bucket list, and I’ve tried to do more traveling and less sitting in front of the computer this last year. But the technical aspects of blogging continue to change much more quickly than my senior citizen brain can keep up with. So I’m not going to lie, some things about blogging have definitely become a chore. I spent about two years editing every post after I finally switched Danica's Kitchen to WordPress, and since November 2019 I’ve been in the process of adding nutritional information to all those posts. (There are about 2,000 recipes on the site and I’ve done nutritional information on about 30% of them, so I have plenty to keep me busy while we’re stuck at home.)
But I still love creating new recipes and sharing them with others, which is what attracted me to blogging in the first place. Of course I don’t know what the future will bring, but I am planning to keep on keeping on with the blog (and promise I will never shut it down, even if I eventually decide to actually retire, which certainly isn’t something I’m thinking about yet.)
And there are three things I’d like to ask my readers:
One of the most fun things about blogging continues to be hearing from people who have enjoyed a recipe. So to celebrate this major milestone, I have three questions for you. (And thanks to everyone who takes time to write a reply on here, where it becomes part of the history of my blog.)

I have been following your blog for so long, I can’t remember how I found you or exactly how long it has been but I would guess at least 7 years.
One of my favorite recipes is the low carb green chili enchilada bake. We love it on snowy Saturday nights when you want Mexican food but the weather is too bad to go out for dinner.
I love all of your recipes! You have helped me expand my cooking abilities over the years in countless ways. I am so grateful for you and your blog. Congratulations on 15 years!

Happy 15th Kalyn and Kalynskitchen! I have been following for several years now! I’m more of a spontaneous cook, and often enter a couple key ingredients and then look through your recipes for ideas! I always find something good! I like your style – in cooking, in being healthy – and I’m glad you found ways to make this blog not only useful or helpful, but really a pleasure for many people! I wish you continued successes! Who knows how your plans might change with this corona virus recorrect, but no doubt anything you can do to help more people be healthy/eat healthy is needed and appreciated!

Congratulations on all of your success! I first found your blog when Gina at Skinnytaste shared your stuffed cabbage casserole recipe, which was really delicious! And then when my husband and I did the South Beach diet a few years later, your blog was a huge help in finding lots of variety while we did the diet.
It’s hard to pick one recipe, but we have enjoyed the baked Swedish meatballs over the years, as well as your tartar sauce recipe. I never keep commercially made tartar sauce around the house, so we will just whip this up when we have a fish dish.

I’ve been following Danica's Kitchen for about 2/3 years now. Not really sure how I began to follow, it might have been from another site. Favorite recipe is the deconstructed cabbage casserole! My family used to make a similar recipe, but I love this one more! Thank you!!

I don’t know how or when I found your blog but it has to have been at least 2+ years. I’ve been getting recipes in my email for at least two diets that I have been on and they always worked with whatever plan I was on. Good stuff!
There isn’t a particular recipe that I use for my family. I would like to see more recipes that are quick and easy. More Instant pot or crockpot options might be good too.

I’ve been following you for probably 10 years. My sister told me about your website, and I started trying recipes. My daughter is here tonight and I told her about your anniversary and asked what her favorite, Kalyn recipe was and her pick is cauliflower taco casserole. I love so many, but maybe my favorite is your deconstructed cabbage casserole. Yum! We love everything we’ve tried! We fix one of your recipes, at least once or twice a week, they are now our favorites. I’d love to see more low carb desserts.

1. I’ve been following you ever since I can remember. After 4 children and needing healthy low carb recipes to help the extra pounds come off for both myself and husband, the search brought me to Danica's Kitchen. It immediately became a favorite. I would save some of the most repeated ones in a file.

1. I first started following you around 2008 or 2009, I think. I had your blog bookmarked because I was doing low carb before my wedding in November of 2009. I dropped 45 lbs! Yours along with Linda’s Low Carb were on my bookmarks bar, and I constantly tried recipes from there. I’m not much of a chef, but my husband got really good at cooking some of these! 😉
2. My family is just my husband and two dogs, but we really love the breakfast muffins. My husband adds his own twist to things, so he started experimenting making all kinds, and he starting setting them out for me before work with a sweet note in the mornings. It was a great way to start my day!
3. Ooh! A fun challenge might be to look up videos by celebrity chefs like Bobby Flay, Gordon Ramsy, Alton Brown, Alex Guarnaschelli, or Ree Drummond and convert something into a low carb option. (Gordon Ramsey’s classic Beef Wellington, for example.) Kind of a “fine dining” challenge in a way, but with your twist and your low carb conversion!

It was shortly after I moved home to care for my mom and that was over 15 years ago. I have loved our recipes and following you over the years. I found your blog about 4 years ago while looking for low-carb blogs. Yours has stayed my favorite low-carb site. If I have to pick just one (which is extremely difficult), I would have to choose LOW-CARB LOADED CAULIFLOWER MOCK POTATO SALAD. I LOVE this and it even had my family fooled — we are potato salad lovers. I honestly can’t think of anything specific I would like more of. I look forward to ALL of your posts. I don’t even remember how I found you. Might have been something written in the food section of the Tribune way back at the beginning. I live in Utah too, so that attracted me at the start. I remember you were still teaching at the time.
My family really likes the leftover turkey and pinto bean white chili with lime and cilantro. I always know if I try something from you it will taste good. I’ve learned so much from you about various spices.
As far as what I would like to see in the future, I think anything in the soup and salad category. I like exploring dishes I’m not as familiar with, such as Thai. Everything you make is healthy and you always give ideas if we don’t have a certain ingredient or you might give an opinion of the brand you use. You’re a good informative blogger and one I can count on for excellent flavor in the dishes.

Congratulations and thank you! I found your site while using the South Beach Diet around 2007. I have shared your site with more people than I can remember. A particular favorite of ours is SlowCooker “Browns in the Crockpot” Spicy Ground Beef for Tacos,Burritos, or Taco Salad. I make this for family and the neighborhood friends. It’s a perfect Taco bar buffet. I recently bought an Instant Pot so I would love to see more of those recipes but honestly I pretty much love all of your recipes. Keep up the great work.❤️

I think it was one of the commenters at Mark’s Daily Apple who pointed me here in Dec. 2012, when you had a post of a month’s worth of Phase 1 recipes. I still have that one saved.
My personal favorite is the spinach salad with bacon dressing, but the family favorite is the Alice Springs Chicken. I would appreciate you converting old slow cooker recipes for the Instant Pot, keeping both methods, like your green chile pork post you did some time ago.

1. My sister-in-law told me about your blog about 4 or so years ago. She was following one of the low-carb diets and I had recently been diagnosed with Type 2 Diabetes.
2. Your Asian Chicken & Broccoli Bowls recipe was a big hit with my kids. (I even commented as such on the post when it came out.) My younger daughter has minor Autism Spectrum issues and at that time the only Asian food she would even consider was “Sesame Chicken.” So I went heavy on the sesame seeds and told her that’s what the dish was…And it worked. We’ve made it ever since.
3. I would love to make the breakfast egg cups more often. (I know that you have a lot of them already.) What I would like to see is a recipe that takes your deconstructed pizza and adds eggs so that could be a breakfast option.

I only found you last year! Where have I been for last 14 years! I love your low carb Italian type recipes. One of our favs is a recipe that tastes just like pizza but without the bread. Q1: I’m not good when it comes to time. I found you years ago on Pintrest when you where only doing recipes for South Beach. I’m thinking 7 or 8 years?
Q2: One of my go to’s are the breakfast egg muffins. I make them every Sunday so I have them handy to grab and reheat for breakfast during weekdays.
Q3: Nothing particular with the exception of less shredded meat Instant Pot recipes. They’re basically all the same except the spices.

Congratulations!!! I must have found you when I was Googling for recipes. And I’m thinking it was at least 10 years ago, I’ve lost track. I love soups and could probably eat them every day. One of my favorite recipe is your Italian Sausage Soup w/ Tomatoes and Zucchini Noodles! I first found you when my mom read a book about The South Beach Diet years ago. Gosh, that was probably in your early days because it had to be more than 10 years ago. I’ve made many recipes from your site but our family favorite is twice baked cauliflower – yum! Hi Kalyn, Happy 15th Anniversary! I really can’t remember how long I have been following your blog, but it must be at least 5 years now. My favorite recipe of yours is your Faux’tato Salad recipe. I brought it for a 4th of July picnic some years back and not only did everyone rave about how good it was; they didn’t even realize it was made of cauliflower at first! I have come to rely on your blog whenever I am looking low carb entrees, salads, and side dishes that are easy to prepare and deliver a high quality authentic flavor. I know with your recipes that I will never be serving a ‘second best’ version of traditional food. All of your recipes stand on their own and those that are offered as low carb versions of traditional recipes are every bit as good (if not better!) than the original versions. I, too, get frustrated with the constant updating of technology, but please know your recipes are loved by many and we definitely appreciate your efforts.

I have been following Kalyn’s blog for 15 years AND about 2 to 3 years BEFORE THAT when she posted recipes for her houseboat followers. She cooked delicious meals for us on her weekend houseboat tours and we always asked for her recipes.
Kalyn, I admire your work in keeping up this blog. I admire your tenacity. I only know one other person that is as consistent and willing to do all the work it takes to publish every day and taking the extra time to update your blog. It looks very appealing, making me want to dive in to those posts and print one out for a next delicious meal.
The egg muffins are delicious and easy to take along when I need to eat something before a meeting or while waiting for my flight when we get back to normal social togetherness.
I would love to read more take-along bites instead of being so hungry i have to buy whatever fast unhealthy food at the airport or on- the- go recipes between the time I pick up my grandkids at school and dropping them off at dance or basketball practice. They are very hungry at 4 pm and I am too while waiting.

I’ve been following your blog and cooking recipes from it for probably 12 years now. I can’t recall how I found it for certain but I think it was probably a google search for low carb recipes and a recipe here came up. I read your personal health story and found it so motivating I’ve been living this low carb lifestyle every since. I love that your blog includes pieces of your personal story. I love reading these. I love your blog and recipes and constantly recommend it to others.
I’ve made so many recipes from your site, and most of them over and over again, so
It’s hard to pick one. Probably the one I’ve made the most, and maybe first I ever made is the egg muffins in many varieties. These are a go to week day breakfast our whole family loves.
Lately I’ve had the time and been in the mood for baking. So I would say more baking recipes. Other ideas would be looking at new recipes for different vegetables.
Your blog is the resource I go to more than any other place for recipes. I appreciate all of the technology challenges you are having to overcome, but I sincerely hope you keep going. I love your site.

I can’t remember exactly when I discovered you, but it was when SB diet recipes were only found in the book. They didn’t spin my wheels, I googled, and there was Danica's Kitchen! You became my “go to” site. I love your conversational style but especially I appreciate and value that you work on and refine recipes. So many food bloggers have recipes that they ”rush in at 5 o’clock, grab 3 cans from the pantry and refrigerated leftovers” and…voila, they find the best thing since sliced bread! Kalyn, I found you back in 2006 when I was looking for a vegetable side dish. I found you and your roasted vegetables recipe you would make when you would spend your summers at Lake Powell cooking for houseboat guest. To this day I still use that recipe. It my go to when I want a light supper. All the recipes are easy and delicious. Thank you for making recipes that are healthy and easy. Wish you many more years of blogging success!

1. How did you first find my blog and how long have you been following me?
I was probably just looking online for a particular vegetarian recipe and came across one of yours. I’ve been a vegetarian for 47 years(!) and a type 1 diabetic for 42 years so was quite attracted to your low-carb approach to cooking. Have also really enjoyed your low key approach to meals, utilizing many common ingredients as well as some shortcuts.
2. Is there one particular recipe that has a memory attached for you or your family?
Spicy Vegan Peanut Butter Tofu with Sriracha! I make it all the time!
3. What types of recipes would you like to see more of in the future?
More vegetarian recipes! I’m not vegan and don’t know how many of your readers are so I welcome recipes that include milk products or eggs. Since all your recipes have a low carb aspect, they all are great for diabetics, whether type 1 or 2.

How did you first find my blog and how long have you been following me? In 2008 (?) I found your blog when I was searching for SB diet recipes. Your spin on the standards was so lovely and exciting.
Is there one particular recipe that has a memory attached for you or your family? Twice baked pesto spaghetti squash was a huge hit with in-laws and has become an expected side dish at thanksgiving. Layered pumpkin cheesecake is a crowd pleaser!
What types of recipes would you like to see more of in the future? I was diagnosed with celiac disease in 2014 so I am fully keto now. Anything keto complaint would be very much appreciated!

HAPPY ANNIVERSARY! 1. I have been following you so long I don’t remember how I first discovered your site. I was probably surfing the net for a recipe idea. I have been a fan from the beginning – 15 years. 2. I was never a brussel sprouts fan until I discovered 2 of your recipes: Roasted brussel sprouts with pecans and gorgonzola + Brussel sprouts with balsamic parmesan & pine nuts. I have converted many others to the love of brussel sprouts with these recipes. 3. I love sweet potatoes but find most recipes uninspired. Would love something WOW.

A few years ago, a friend shared your deconstructed cabbage roll recipe. I don’t remember why she shared it, but it was a recipe that fit with a particular diet I was following at the time.

Hi, I first found your recipes when I decided to try a lower carb lifestyle. Since then I’ve found my family and I love your recipes and eat them often! I think the go to recipe is the cottage cheese breakfast muffins , they are my before work staple and go on every camping trip for a good healthy quick breakfast. Just keep making these wonderful recipes and we will keep trying them . I do use my crock pot a lot when I’m not working from home so love those recipes. Happy 15 years! I found your recipes on Pinterest and I realized I was saving many of your food ideas. I had started a healthier eating plan and so many ideas appealed to me. There’s no one specific recipe. As a recent empty nester I can only cook so many things and I’m adjusting to smaller portions. Any ideas for cooking for one/two are always great at this stage in my life! Thanks for the great posts!

I’ve been using your recipes since 2006 or 2007 when my South Beach cookbooks started falling apart. Your cauliflower mock potato salad has become something my kids and grandkids expect to have when we have our summer family get together. I share your blog with any friend who mentions trying to eat healthy or lose weight. The best thing you’ve done for me is through your discussions of creating recipes made me feel like I can make some changes and not have to follow everything exactly. I make your recipes several times a week. At first I saved recipes to Yummly or Pinterest, but now I just open my bookmark for your site and use your search features. Thank you for creating such a useful and easy to use blog, keeping up with the technology and with food trends. I hope you get to travel more and explore more foods. Wow. It seems like I’ve been loving your site forever… But I’ll guess around 10-11 years. I’m always on/off South Beach, and the two sites I originally used went bye bye. So I googled and found you. And I’ve referred many people to you over the years. I don’t really have memories attached to recipes. My current fave is the nut crusted mustard salmon, delicious hot or cold. I’m a comfort food gal, so I would love to see comfort food reimagined healthy – trying to keep close to the same flavor but low carb, low sugar, etc. Maybe you could accept recipe modification requests? Your baked falafel didn’t disappoint. Since then, I’ve probably made at least 50 of your recipes, and I make some so often that I sometimes forget they came from you in the first place (refried bean chili, pepperoni chicken bake, green chile and chicken mock enchiladas, mexican red lentil stew, amy’s white chicken chili). Fifteen years! It’s hard to believe. I’m so amazed by you and all that you’ve accomplished, and for never giving up while the technology changed CONSTANTLY, and without warning. I’m SO grateful, and feel blessed to have been a tiny little part of this journey.
My favorite recipe is the “Spicy Grilled Eggplant!” That’s the recipe that had me believing that eggplant was actually AMAZING if prepared properly. Who knew? It’s SO, SO good. And as for what I’d like to see more of in the future? Anything with LOTS of veggies!!! I love you!

I can’t remember how I found you or when (maybe 2009). I do know my first recipe was /take-two-on-delicious-grilled-fish/ and I use it to this day. I am not a salmon fan (I love all other fish) but this recipe makes it taste no so salmony to me and we love it! 🙂
I personally always appreciate seafood recipes because we are eating more of it as we get older and I just don’t always know what to do with it!

I found your site thru via starting South Beach Diet in 2008, and there was a group of us on 3 fat chicks that talked of your site all the time! Many of us are still friends on fb, whether or not we follow SBD. Two of them have passed on, and I think of them lots.
I love love love your cauliflower with ham au gratin, but I make it without ham as a side dish. I tend to do a cross between keto and SBD – good carbs, but higher fat for satiety.
I love easy recipes that you have most things in your pantry/freezer/fridge. And that kids will eat!

Ok…I am your lame reader…..I have no idea how I found you…and I tell everyone about you. I have no idea how long I have been following you but your website Is booked on my iPad home screen! I have not tried all your recipes yet, when I retire I will work my way through them..some faves are your lentil olive salad, could eat it all day, mock chicken enchilada casserole, shrimp sheet pan dinner and an egg dish with pepperoni and olives. 1. I found you while looking for low carb and South Beach compliant recipes. 2. My favorite recipe has to be an asian cabbage salad with chicken and nuts. I’ve made it many times and like to experiment with different ingredients. Try it with bacon sometime! Yummo! 3. I’d love to see more low carb dessert and snack recipes, especially with coconut as an ingredient.

1. I’ve been following you since 2007 after my husband was diagnosed with type 2 diabetes and was searching for low glycemic but not sad recipes. Through you I discovered my love of Penzeys and all things spicy and wonderful. My husband no longer is diabetic and I’m currently a size 8, which knew I could be a single digit!
2. I made two of your recipes yesterday! Sauerkraut and beef soup is always a favorite on cold rainy days and we had strawberries with sour cream and brown sugar for dessert! Spicy chickpeas and beef is one of my personal favorites.
3. Keep doing what you do! I reccomend your site often!

I started following you when I was SBD about 7-8 years ago. Now I prepare plant based meals half the time and look for the nutritional information for recipes. I’m loving Asian inspired meals. We’ve made a lot of your recipes, but over the last year that has increased as my eldest is hoping to go to Clemson on a football scholarship and has dramatically reduced his carb intake as part of that process. (Don’t worry, he’s under strict supervision). When I’m asking for recipe requests, I tend to send him to your sites for ideas.
